A dear friend is breastfeeding her allergic baby (3rd of 3) and gone vegan for most of her diet (besides the chicken she eats as a main course). Necessity is the mother of all invention (sorry, you know I love a good pun) and so this vegan chocolate chip cookie dough dip is good for those who need to avoid eggs or butter.
Mixes up in 10 minutes. Chill as you would a cheese ball and then surround with the fruit of your choice to feel a little less guilty.

The start of the academic calender erases the lazy days of summer in a snap. Today I was dropping off kids, picking up kids, teaching other people’s older than mine kids. My reward was this yummy sandwich for dinner, accompanied with a side of edamame.
What was delightful about this toasted brown bread, guacamole spread, baked tuna, veggies and chickpeas from soup sandwich is that everything but the bread was already in the fridge.
Put together, these leftover elements made for a new, delicious, yummy in my tummy with minimal effort.

If you like shrimp, stir fry and Sriracha sauce, this is the recipe for you. While a half cup was lost in the making of this yummy dish (my youngest can now reach items at the table edge) pouring out another dose was well worth it.
