One Dish Spinach Pie for #SundaySupper

They say birds of a feather flock together. The most helpful example of this is when friends get on an healthy kick together. Instead of lunches or coffee, you share an hour workout. Instead of dinner out, you make a healthy meal in. That’s what happened with this easy Spinach Pie. If you like your egg yolks solid, leave it in for an extra few minutes. If a transparent, crumbly yellow yolk is more to your taste, take out at exactly an hour. PS since it takes so long to cook, make sure the oven is on (mine got turned off accidentally half way through. Good think we had a side salad to munch on while we waited.)

Sunday Supper: I Cooked Tofu (and I Liked It)

Six months into my pescatarian adventure, I have ranged further afield than salmon and quinoa, with mackerel on my horizon. You know you’re off meat for good when you experiment with tofu. That much maligned substance was where I set my sights for this one pot stir fry meal. In a tempura like coating, I found I liked the texture of tofu among the other flavors.

I had two boxes of tofu to work with; the first was milky white and the second grey and stringy. I dumped the grey and worked with the fresher material. Make sure you get the firmest kind available fi you’re going to fry it up.

Sunday Supper: Zucchini Pasta with Tuna and Tomato

I adapted this recipe from Five and Spice for Zucchini Noodles with Tuna and Tomato. Using thin slices of zucchini instead of pasta is a great way to eat more veggies and half your carbs. Not to mention, absolutely delicious. Be careful to use only a few tablespoons of water when you blanch the zucchini.
Otherwise the water is really difficult to drain out (I ended up broiling mine).
