Cooler temperatures means gourd season. And gourd season means pumpkins! I love the rich texture of pumpkins and their versatility as savory or sweet fillings in muffins, soup, or pasta (so much so I made a Pinterest board devoted to them).
This Banana Chocolate Pumpkin Pudding was my first time working with the orange favorite in 2015. They were supposed to be muffins but the combination of banana and pumpkin (minus eggs and flour) didn’t quite rise. No matter, with a bit of whipped topping, still full of yummy goodness flavor.
