Veracha Eggplant for Easter #SundaySupper

Take eggplant, for example. The gourd that used float in the curries of my childhood is now a side dish I crave.

This easy to make yogurt topped baked eggplant gets a new twist when you mix in True Made Foods Inc. veracha hot sauce.

Be sure to watch those roasting pine nuts – they are still good crispy.

Have 10 Minutes? Make this Frittata Tonight #Sundaysupper

This frittata came together so easily, it was ready even though I was behind schedule preparing the other brunch style dishes. Best part is that the spinach, mushroom, egg (and optional feta on top) set so delicately, you can serve in style right from the saucepan on the table.

Foil Wrapped Honey Salmon for #SundaySupper

Cooking from what you have on hand is a stockist’s dream. Vinegar, garlic, honey, a green herb like thyme (I substituted parsley): this salmon dish takes about 10 minutes to prepare and 15 minutes to bake.  Divide the salmon into smaller pieces to freeze for a delightful treat for later. Almost anything can make a great side. Roasted cauliflower is a house favorite. The best part is that it can roast alongside the fish while so your hands are free attend to the 1000 other things that need doing before mealtime.
